Soba is a religion and I am an heretic
I plead guilty, I knead my dough as delicately as a battering ram, calculate my water proportion haphazardly. That makes the flattening and cutting process extremely tedious,
Still, I managed to miraculously pull out a few noodles
For two servings
- 250g soba noodles
- 1 green onion
- 1/2 mozzarella di buffala (100g tofu if you want to make it a vegan dish)
- 1 handful of almonds
- 10 green asparagus
- 1/8 stale baguette (for croutons, use shop bought if you feel lazy)
- a little vegetable oil for frying
- 15cl of your favorite salad dressing
Blanch your asparagus and cut them in chunks
Mince the onion
Pestle your almonds to obtain small chunks
Loosely cut or tear pieces off your mozarella
Cut your bread and fry your croutons at the last minute to have them warm when you’ll serve your salad
Place 125g noodles at the bottom of a flat bowl and add half of each of teh ingredients you prepared previously in no particular order
My favorite sauce is an ‘Italian’ dressing with just balsamic vinegar and olive oil and just a dash of salt and pepper
