Assorted mushroom and tenderloin waffles – Fontaine style –

this, as you obviously guessed if you know what ‘Fontaine’ is,  is a celebration of the release of Genshin Impact V4.0! haters gonna hate, gamers gonna play 🙂

For 4 gamers:

For the waffles:

  • 125g Type 65 flour
  • 15g refreshed sourdough starter
  • 50g butter
  • 1 egg
  • 15cl milk (approximately)

For the topping:

  • 120g pork tenderloin
  • 100g porcini mushrooms
  • 100g chanterelles
  • 100g hedgehog mushrooms

For the sauces:

  • 20cl pale ale
  • 20cl red wine
  • 8cl Armagnac or your favorite brandy
  • 3 shallots
  • 1 apple
  • 15cl thick crème fraĂ®che

Waffles
Soften the butter in a mixing bowl, then add the flour. Crumble the butter into the flour, then mix in the egg and sourdough starter. Gradually loosen the mixture with the milk until you have a smooth batter.

The rising time depends on your sourdough starter; I suggest letting it rise for 6 hours at room temperature. Then transfer to the fridge to halt fermentation until it’s time to cook the waffles.

Aim for 6 whole waffles, which will be cut in half for plating.


Meat Preparation
Sear the tenderloin on all sides, then reduce the heat to its lowest setting. Cook covered for 1 hour or until the meat is perfectly tender and cooked through.

Slice into 12 thin pieces.


Sauces

We’ll prepare three condiments to pair with the different mushrooms:

  • Shallot compote with beer
  • Apple compote with red wine
  • Armagnac cream
  1. Finely chop the shallots and sauté them in a little oil. Deglaze with beer and let them simmer until compote-like.
  2. Peel the apple and dice into small cubes. Sauté in a little oil, deglaze with red wine, and let simmer until reduced.
  3. Mix the Armagnac with crème fraîche, reduce gently, and ensure it doesn’t separate. Adjust the texture with a bit of cornstarch if necessary.

Mushrooms
Dice each type of mushroom into small cubes and sauté them separately. Keep warm until plating.


Plating
Place 3 half-waffles per plate. Top each half-waffle with a slice of tenderloin. Add a portion of each type of mushroom and its corresponding sauce:

  • Chanterelle: Armagnac cream
  • Porcini: Apple compote with red wine
  • Hedgehog mushroom: Shallot compote with beer

Serve hot.
