Actually, it’s a non-recipe, just for inspiration

For 10 small canapé-style bites:

  • 2 slices of sourdough bread
  • 2 sea urchins
  • 1 spring onion
  • A pinch of Guérande salt

Remove the roe from the sea urchins and set aside.

Cut each slice of bread into 6 pieces.

Toast in a little olive oil until golden.

Let cool for a few seconds to take the blaze off.

Finely chop the spring onion.

Assembly: Place one sea urchin roe on each canapé, garnish with a bit of spring onion and a pinch of salt.
