There’s nothing that wouldn’t be self-explanatory about slicing fish and placing it on a bit of rice, so no elaborate recipe for this special edition… just something for the eyes and to savor the concept.

What is extraordinary—and strangely cleaving —is that the friendly fishmonger who sold me this piece seemed to feel like she was ripping me off by selling me this fatty, barely steak-worthy cut that had been sitting there while she carved up the “good” bluefin tuna from another beast proudly displayed on her counter.

So, in this rare case, I praise the ignorance of fishmongers in small-town France who, had they been in Japan, would probably have sold me this piece for eight times the price.

Just something for the eyes…
