{"id":954,"date":"2019-10-27T23:50:11","date_gmt":"2019-10-27T22:50:11","guid":{"rendered":"https:\/\/lacuisinedenounours.fr\/?p=954"},"modified":"2024-11-19T21:50:56","modified_gmt":"2024-11-19T20:50:56","slug":"john-dory-and-celeriac-with-tarragon-sauce","status":"publish","type":"post","link":"https:\/\/lacuisinedenounours.fr\/?p=954&lang=en","title":{"rendered":"John Dory and Celeriac with Tarragon Sauce"},"content":{"rendered":"<p>A beautiful trawled John Dory, with firm, delicate flesh, an indecent amount of butter, and a playful balance of acidity between vinegar and lemon.<\/p>\n<p><strong>Serves 1<\/strong><\/p>\n<ul>\n<li>1 thick fillet of John Dory<\/li>\n<li>1\/8th of a celeriac bulb, about 140g<\/li>\n<li>1\/8th of a pineapple, about 80g<\/li>\n<li>3 tablespoons cr\u00e8me fra\u00eeche<\/li>\n<li>50g Normandy butter<\/li>\n<li>1\/2 teaspoon Chardonnay vinegar<\/li>\n<li>1\/4 of a lemon<\/li>\n<li>1 sprig of fresh tarragon<\/li>\n<li>A pinch of salt<\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<ol>\n<li>Slice the celeriac and pineapple into julienne strips.<\/li>\n<li>Cook the celeriac first, as it needs slightly longer than the pineapple:\n<ul>\n<li>Saut\u00e9 the celeriac for 6 minutes over medium-high heat in 10g of butter.<\/li>\n<li>Add the pineapple and saut\u00e9 for another 3 minutes over medium-high heat in an additional 10g of butter.<\/li>\n<\/ul>\n<\/li>\n<li>Combine both, then deglaze the pan with the Chardonnay vinegar. Keep warm.<\/li>\n<\/ol>\n<p>Zest and juice the quarter lemon.<\/p>\n<p>Melt 20g of butter with the cr\u00e8me fra\u00eeche.<\/p>\n<p>Add the lemon zest and juice, gently stirring over very low heat to create a smooth sauce, similar to a beurre blanc.<\/p>\n<p>Sear the fillet in a pan over medium heat with 10g of butter.
