{"id":943,"date":"2019-10-22T22:35:59","date_gmt":"2019-10-22T20:35:59","guid":{"rendered":"https:\/\/lacuisinedenounours.fr\/?p=943"},"modified":"2024-11-19T19:40:18","modified_gmt":"2024-11-19T18:40:18","slug":"mature-cheddar-and-nori-seaweed-waffle","status":"publish","type":"post","link":"https:\/\/lacuisinedenounours.fr\/?p=943&lang=en","title":{"rendered":"Mature cheddar and Nori seaweed waffle"},"content":{"rendered":"<p>It\u2019s Autumn,<\/p>\n<p>Colorful foliage, wind, rain, and public service strikes\u2014all reliable signs that we\u2019re deep into this season.<\/p>\n<p>Based on the classic light Brussels waffle, this recipe gets a double umami twist.<\/p>\n<p>For about ten waffles:<\/p>\n<ul>\n<li>250g flour (150g Type 80 and 100g high-gluten\/Manitoba flour if you have access to different types of flour to enhance the rise)<\/li>\n<li>125g butter<\/li>\n<li>12g fresh yeast<\/li>\n<li>2 eggs<\/li>\n<li>20\u201330 cl milk**, to adjust consistency depending on your waffle iron<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>100g mature Cheddar<\/li>\n<li>1 to 2 sheets of Nori seaweed** (the kind used for sushi)<\/li>\n<li>A pinch of salt<\/li>\n<\/ul>\n<p>We\u2019ll prepare the waffle batter in two steps. First, we\u2019ll let a slightly too-thick dough develop, then adjust it to the right consistency at the last moment by incorporating our additional ingredients.<\/p>\n<p>Everyone has their own approach to waffle batter. Some take the aggressive route and throw everything into a food processor, but here\u2019s how I prefer to do it:<\/p>\n<p>1. Melt the butter in half of the total milk, without letting it boil.<br \/>\n2. Prepare the beaten eggs.<br \/>\n3. Crumble the yeast finely into the flour.<br \/>\n4. Quickly mix the flour with the eggs in a stand mixer.<br \/>\n5. Gradually add the liquids while mixing until you get a smooth batter.<\/p>\n<p>Let the batter rise for a good 1 hour and 15 minutes.<\/p>\n<p>For the umami twist:<\/p>\n<p>&#8211; Finely grate the Cheddar.<br \/>\n&#8211; Chop the Nori into small pieces (0.2 to 0.5 cm\u00b2).<\/p>\n<blockquote><p>This is where you define your waffle\u2019s personnality: adding 1 Nori sheet will let the Cheddar dominate, resulting in a fairly classic cheese waffle. Adding up to 2 sheets shifts the balance, with the seaweed\u2019s briny flavor taking the lead.<\/p><\/blockquote>\n<p>Incorporate these into the batter, which you\u2019ll have adjusted in liquids content to the proper consistency for your waffle iron.<\/p>\n<p>baking :<br \/>\nNo more than 5 minutes. For soft, fluffy waffles, aim for 2\u20133 minutes.
