So, I went with a mousse instead, adding a few extra touches.<\/p>\n<p>&#8212;<\/p>\n<p>Serves Six<\/p>\n<ul>\n<li>30cl of Isigny cr\u00e8me fra\u00eeche (40% fat content)<\/li>\n<li>1\/2 melon (15cl melon juice, strained through a chinois if not juicing it yourself)<\/li>\n<li>6 apricots<\/li>\n<li>15cl unsweetened raspberry coulis<\/li>\n<li>Optional: 2 packets of vanilla sugar to adjust the mousse\u2019s sweetness<\/li>\n<\/ul>\n<p>Additional Tools:<\/p>\n<ul>\n<li>1 nitrous oxide cartridge for a siphon<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>If making fresh juice, scoop melon pieces with a spoon and extract juice using a juicer.<br \/>\nAvoid using a blender as it will leave too much cellulose residue, which might clog your siphon.<\/p>\n<p>Mix the cr\u00e8me fra\u00eeche and melon juice until smooth.<br \/>\nDon\u2019t worry if there are tiny lumps of undissolved cream\u2014they\u2019ll only create small white specks in the mousse at worst.<br \/>\nPour the mixture into the siphon, seal it, and pressurize with the nitrous oxide cartridge. Let it chill in the fridge for at least 30 minutes.<\/p>\n<p>Peel the apricots and dice them finely (brunoise).<br \/>\nPlace the diced apricots in the freezer.<\/p>\n<p>Optional Tip: I tried pre-drying the apricots for 2 hours at 70\u00b0C to improve their texture, but honestly, it didn\u2019t make much difference. Chilled apricot brunoise works perfectly fine!<\/p>\n<p>Distribute the apricot cubes evenly into six wide, flat-bottomed glasses or verrines.<br \/>\nLayer the mousse between the apricot bits with the siphon.<br \/>\nFinish by topping the mousse with a final layer of apricot cubes.
