It\u2019s not exactly a pizza, since the dough is pre-cooked and served relatively cold. It\u2019s not a pita, because it\u2019s not stuffed, and it\u2019s not a bruschetta, as it\u2019s not a slice of a larger bread&#8230; so, let\u2019s just go with \u00ab\u00a0summer pizza.\u00a0\u00bb<\/p>\n<h4><strong>Serves Two<\/strong><\/h4>\n<h5>Ingredients:<\/h5>\n<ul>\n<li>250g bread dough<\/li>\n<li>1 beefsteak tomato<\/li>\n<li>1\/2 pink grapefruit<\/li>\n<li>1 small red spring onion<\/li>\n<li>2 tablespoons cr\u00e8me fra\u00eeche<\/li>\n<li>1 large slice of smoked salmon<\/li>\n<li>180g pre-cooked crayfish tails<\/li>\n<li>A few leaves of your favorite basil<\/li>\n<\/ul>\n<p><strong>Optional:<\/strong><\/p>\n<ul>\n<li>A bit of balsamic vinegar and olive oil<\/li>\n<\/ul>\n<hr \/>\n<h4><strong>Instructions<\/strong><\/h4>\n<ol>\n<li><strong>Prepare the Base:<\/strong><br \/>\nRoll out the dough into two oval shapes, approximately 25cm x 15cm, and place them on parchment paper. Pre-bake in a very hot oven, ideally on a pizza stone, for 3\u20134 minutes. Watch carefully to ensure the dough doesn\u2019t puff up too much; poke or press down any large bubbles. You can even flip the dough like a pancake during baking. Remove from the oven and let cool to room temperature.<\/li>\n<li><strong>Prepare the Toppings:<\/strong>\n<ul>\n<li>Saut\u00e9 the crayfish tails over high heat for 3\u20134 minutes until they release no more water. Set aside in a bowl and refrigerate.<\/li>\n<li>Peel the grapefruit segments carefully, then cut each segment into 3\u20134 pieces (1\u20132 cm cubes).
