{"id":904,"date":"2019-05-05T23:50:21","date_gmt":"2019-05-05T21:50:21","guid":{"rendered":"https:\/\/lacuisinedenounours.fr\/?p=904"},"modified":"2024-11-16T11:57:27","modified_gmt":"2024-11-16T10:57:27","slug":"lamb-loin-on-mixed-vegetable-crisps","status":"publish","type":"post","link":"https:\/\/lacuisinedenounours.fr\/?p=904&lang=en","title":{"rendered":"Lamb loin on mixed vegetable crisps"},"content":{"rendered":"<p>More from the Original Easter Lamb Challenge series<\/p>\n<p>The long part of this recipe mainly involves drying the vegetable chips&#8230; it takes hours, really, and it&rsquo;s a bit tedious, but the result is worth it \ud83d\ude42<\/p>\n<p>for 4 servings<\/p>\n<ul>\n<li>2 whole lamb loin cuts<\/li>\n<li>2 Carrots<\/li>\n<li>2 Parsnips<\/li>\n<li>2 Pre-cooked and peeled red beets<\/li>\n<li>20g Dried morel mushrooms<\/li>\n<li>100ml Madeira wine<\/li>\n<li>200ml Heavy cream<\/li>\n<li>1 tablespoon Cornstarch<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Peel the carrots, parsnips, and beets, then slice them using a mandolin to a thickness of about 1.2 to 1.5 mm.<\/p>\n<p>Lay the vegetable slices on silicone baking mats and dry them in the oven at 120\u00b0C (250\u00b0F) for about 3 hours. Open the oven periodically to help equalize the humidity inside.<\/p>\n<p>Soak the dried morel mushrooms in warm water to rehydrate them, then roughly chop them.<\/p>\n<p>In a saucepan, combine the Madeira wine, morels, heavy cream, and cornstarch. Reduce the mixture until it thickens, then keep warm.<\/p>\n<p>Sear the lamb loins in a hot pan, cooking them to your preferred level of doneness. Once cooked, slice each loin into two squares, and then cut each square into two triangles.<\/p>\n<p>Arrange the lamb pieces on a bed of assorted vegetable chips.
