{"id":899,"date":"2019-05-05T22:55:19","date_gmt":"2019-05-05T20:55:19","guid":{"rendered":"https:\/\/lacuisinedenounours.fr\/?p=899"},"modified":"2024-11-16T11:36:27","modified_gmt":"2024-11-16T10:36:27","slug":"easter-egg-surprise-with-ground-lamb-and-whisky","status":"publish","type":"post","link":"https:\/\/lacuisinedenounours.fr\/?p=899&lang=en","title":{"rendered":"Easter egg surprise with ground lamb and whisky"},"content":{"rendered":"<p>This recipe is a response to a challenge, and the challenge is simple: Easter lamb but not in its boring, traditional form.<\/p>\n<p>For this recipe, you&rsquo;ll need a special mold: silicone egg-shaped molds to make the Kn\u00e4ckerbr\u00f6d shells. If you don&rsquo;t have them, any other fun shape could work as long as the shell holds about 250 ml (1 cup) to accommodate the \u00ab\u00a0surprise\u00a0\u00bb inside.<\/p>\n<p>A unique twist in this recipe includes nested elements,\u00a0 hence this little pointer to the fava bread.<\/p>\n<p>Serves 4 (as a starter):<\/p>\n<ul>\n<li>100g dried lentils<\/li>\n<li>60g rye flour<\/li>\n<li>15g wheat flour<\/li>\n<li>500ml water<\/li>\n<li>200g finely ground lamb<\/li>\n<li>100ml whisky with a peaty note<\/li>\n<li>30g sun-dried tomatoes<\/li>\n<li>1 tablespoon Chardonnay vinegar<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>4 eggs<\/li>\n<li>80g bean bread<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Kn\u00e4ckerbr\u00f6d dough:<br \/>\nMix the rye and wheat flours with the water to make a dough. Optionally, add flax or sesame seeds for extra flavor. Roll the dough to 0.8mm thickness, then press it into your molds. Dry the dough in the oven at 120\u00b0C (250\u00b0F) for 1 hour. Set the shells aside.<\/p>\n<p>Start cooking the lentils in cold water. Simmer for about 40 minutes until tender, then drain and cool them.<\/p>\n<p>Mix the cooled lentils with the vinegar, olive oil, a pinch of salt, and freshly ground black pepper.<\/p>\n<p>Saut\u00e9 the ground lamb in a pan, then deglaze with the peated whisky. Set aside.<\/p>\n<p>Slice the bean bread into strips<\/p>\n<blockquote><p>These rudimentary soldiers are called &lsquo;Mouillettes&rsquo; in French, a good ethymologically consistent translation could be \u00ab\u00a0wetties\u00a0\u00bb as the idea is that you&rsquo;ll &lsquo;wet&rsquo; them in the egg yolk .<\/p><\/blockquote>\n<p>Fry the eggs sunny-side up.
