Let\u2019s bring them together !<\/p>\n<p>For two servings:<\/p>\n<ul>\n<li>200g scallops &#8211; small ones<\/li>\n<li>4 green asparagus<\/li>\n<li>80g fresh shelled peas<\/li>\n<li>Zest of 1 orange<\/li>\n<li>30g butter<\/li>\n<li>30g flour<\/li>\n<li>20cm Kombu seaweed<\/li>\n<li>2 star anise<\/li>\n<li>1 pinch of cinnamon<\/li>\n<li>45 &#8211; 50 cl\u00a0 water or vegetable\/fish stock<\/li>\n<li>1 tablespoon of Cointreau<\/li>\n<\/ul>\n<p>Pre-cook the asparagus and peas. I recommend 12 minutes for the peas and 15 minutes for the asparagus. Then, set them aside separately.<\/p>\n<p>Prepare a roux over medium heat by melting the butter, adding the flour, and a bit of water. Gradually loosen it until you reach a liquid texture, then lower the heat to a gentle simmer.<\/p>\n<p>Add the scallops, Kombu seaweed, star anise, and orange zest.<\/p>\n<p>Simmer just below the boiling point for 30 minutes, stirring gently.<\/p>\n<p>Remove the Kombu seaweed, cut the asparagus into 1.5cm pieces, and add them along with the peas.<\/p>\n<p>Adjust the texture with a little water if needed, and add the Cointreau and cinnamon.
