{"id":808,"date":"2022-01-30T19:39:01","date_gmt":"2022-01-30T18:39:01","guid":{"rendered":"https:\/\/lacuisinedenounours.fr\/?p=808"},"modified":"2022-01-30T19:39:01","modified_gmt":"2022-01-30T18:39:01","slug":"nouilles-de-sarrasin-sautees-aux-fruits-de-mer-et-legumes-racine-version-%ce%b2","status":"publish","type":"post","link":"https:\/\/lacuisinedenounours.fr\/?p=808","title":{"rendered":"Nouilles de sarrasin saut\u00e9es aux fruits de mer et l\u00e9gumes racine &#8211; version \u03b2"},"content":{"rendered":"<p>Dans ma guerre d&rsquo;attrition pour varier du jambon chips, le sarrasin est une arme \u00e0 manier prudemment, vu qu&rsquo;il \u00e0 tendance faire fuir mes convives habituels.<\/p>\n<p>J&rsquo;adore le sarrasin, en cr\u00e8pes, en nouilles ou en crozets, c&rsquo;est une quasi-c\u00e9r\u00e9ale riche en prot\u00e9ines complexes, seul le quinoa rivalise vaguement avec.<\/p>\n<p>version beta parce que comme un bourrin j&rsquo;ai essay\u00e9 de woker une pleine marmite de nouille soba, on apprend de ses erreurs, et j&rsquo;ai oubli\u00e9 de rajouter de la sauce soja dans la sauce \u00e0 woker&#8230;<\/p>\n<p>sinon, gustativement, c&rsquo;est plut\u00f4t pas mal<\/p>\n<p>pour 4-5 personnes<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>300g farine de sarrasin + 100g farine riche en gluten<\/li>\n<\/ul>\n<p>ou<\/p>\n<ul>\n<li>400g de nouilles s\u00e8ches<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>1\/4 celeri rave<\/li>\n<li>4 panais<\/li>\n<li>8 coquilles Saint-Jacques<\/li>\n<li>1 poign\u00e9e de langoustines<\/li>\n<li>1\/2 litre moules<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>15cl huile \u00e0 haut point de fum\u00e9e (ici p\u00e9pin de raisin)<\/li>\n<li>3cl huile de s\u00e9same<\/li>\n<li>1 gousse d&rsquo;ail<\/li>\n<li>1 \u00e9chalote<\/li>\n<li>1 piment doux jalape\u00f1o<\/li>\n<li>et quand on est pas un idiot un peu de sauce soja<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>ca va \u00eatre simple. long mais simple.<\/p>\n<p>\u00e9plucher puis tailler en julienne les l\u00e9gumes, puis blanchir et r\u00e9server.<\/p>\n<p>Vu que la sauce va parfumer tout ca, on ne va pas surjouer la pr\u00e9paration des fruits de mer.<\/p>\n<p>Cuisson des moules 10 minutes dans un peu d&rsquo;eau sal\u00e9e, pas d&rsquo;aromates.<\/p>\n<p>3 minutes maximum m\u00eame chose pour les langoustines<\/p>\n<p>\u00e9cailler les moules, les langoustines et les coquilles si vous les avez achet\u00e9es enti\u00e8res.<\/p>\n<p>blanchir rapidement les coquilles.<\/p>\n<p>&nbsp;<\/p>\n<p>\u00e9mincer le piment l&rsquo;ail et l&rsquo;\u00e9chalote puis m\u00e9langer avec les deux huiles<\/p>\n<p>pr\u00e9cuire rapidement les nouilles soba,<\/p>\n<p>cuire au wok \u00e0 feu fort entre 1 et 3 minutes chaque portion individuellement<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-807\" src=\"https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2022\/01\/20220130_134056-1024x768.jpg\" alt=\"nouilles de sarrasin garnies\" width=\"640\" height=\"480\" srcset=\"https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2022\/01\/20220130_134056-1024x768.jpg 1024w, https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2022\/01\/20220130_134056-300x225.jpg 300w, https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2022\/01\/20220130_134056-768x576.jpg 768w, https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2022\/01\/20220130_134056-1536x1152.jpg 1536w, https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2022\/01\/20220130_134056-2048x1536.jpg 2048w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Dans ma guerre d&rsquo;attrition pour varier du jambon chips, le sarrasin est une arme \u00e0 manier prudemment, vu qu&rsquo;il \u00e0 tendance faire fuir mes convives habituels.
