de canard en cr\u00eape de betterave"},"content":{"rendered":"<p>\u00ab\u00a0Bourguignon\u00a0\u00bb est une pr\u00e9paration qu&rsquo;on r\u00e9serve au boeuf habituellement, mais ca marche tr\u00e8s bien avec le canard aussi.<\/p>\n<p>pour 6 personnes environ<\/p>\n<ul>\n<li>3 cuisses de canard non-gras<\/li>\n<li>1 bouteille de vin rouge cors\u00e9.<\/li>\n<li>3 carottes<\/li>\n<li>3 \u00e9chalotes<\/li>\n<li>1 bouquet garni<\/li>\n<li>quelques grains de geni\u00e8vre<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>1 petite betterave rouge pr\u00e9cuite (100g)<\/li>\n<li>2 oeufs<\/li>\n<li>150g de farine<\/li>\n<li>50cl de lait<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>un peu de farine pour une b\u00e9chamel<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Mariner le canard, les \u00e9chalotes, les carottes \u00e9pluch\u00e9es et coup\u00e9es en tron\u00e7ons de 3 cm et le bouquet garni pendant au moins une journ\u00e9e dans le vin rouge a froid.<\/p>\n<p>ensuite, on retire les cuisses de la marinade et on huile le fond d&rsquo;une cocotte en fonte. on monte \u00e0 feu moyen \u00e0 fort, et on saisit rapidement les cuisses, puis on d\u00e9glace avec la marinade et les l\u00e9gumes.<\/p>\n<p>baisser le feu et faire r\u00e9duire lentement en cocotte pendant une nuit environ.<\/p>\n<p>avec la betterave, la farine les oeufs et le lait, on pr\u00e9pare une p\u00e2te \u00e0 cr\u00eapes rapide au blender.<\/p>\n<p>on retire les os et la peau restante du canard, puis on effiloche grossi\u00e8rement le canard.<\/p>\n<p>pr\u00e9lever environ 40cl du jus et de la graisse au fond de la cocotte et monter une b\u00e9chamel.<\/p>\n<p>les cr\u00eapes se font \u00e0 la derni\u00e8re minute pour rester bien moelleuses, on sert soit en aum\u00f4ni\u00e8re soit en
