{"id":760,"date":"2021-08-30T00:11:24","date_gmt":"2021-08-29T22:11:24","guid":{"rendered":"https:\/\/lacuisinedenounours.fr\/?p=760"},"modified":"2021-08-30T00:11:24","modified_gmt":"2021-08-29T22:11:24","slug":"ravioli-de-petoncles-et-poivrons-antohi","status":"publish","type":"post","link":"https:\/\/lacuisinedenounours.fr\/?p=760","title":{"rendered":"Ravioli de p\u00e9toncles et poivrons Antohi"},"content":{"rendered":"<p>Parfois ca tourne mal, on crame sa garniture, on cuit trop ses ravioles, on s\u00e8che trop la pate&#8230; MAIS sur le fond c&rsquo;est une bonne id\u00e9e.<\/p>\n<p>et du coup &lsquo;je pose ca ici&rsquo;<\/p>\n<p>Pour 2 personnes en plat unique (une dizaine de raviolis grand format)<\/p>\n<p>base de p\u00e2te \u00e0 l&rsquo;Italienne<\/p>\n<ul>\n<li>100g de semoule fine<\/li>\n<li>1 oeuf<\/li>\n<\/ul>\n<p>garniture<\/p>\n<ul>\n<li>200 g de noix de p\u00e9toncle<\/li>\n<li>2 poivrons Antohi<\/li>\n<li>3cl d&rsquo;Armagnac<\/li>\n<li>10g de beurre<\/li>\n<\/ul>\n<p>sauce<\/p>\n<ul>\n<li>10cl de creme fraiche<\/li>\n<li>0,5g de filaments de safran<\/li>\n<li>20g de poutargue<\/li>\n<li>6cl d&rsquo;amaretto<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>quelques tomates-cerise petit format pour la d\u00e9co<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>On pr\u00e9pare la p\u00e2te au crochet avec l&rsquo;oeuf et la semoule et on repose 1 h minimum au frais sous film alimentaire.<\/p>\n<p>vider et \u00e9mincer les poivrons jusqu&rsquo;\u00e0 des morceaux de 2 \u00e0 3 mm de c\u00f4t\u00e9 maximum<\/p>\n<p>\u00e9mincer les noix de p\u00e9toncle jusqu&rsquo;\u00e0 4 mm de c\u00f4t\u00e9<\/p>\n<p>caram\u00e9liser l\u00e9g\u00e8rement le beurre et saisir les poivrons l\u00e9g\u00e8rement, puis ajouter les p\u00e9toncles, saisir l\u00e9g\u00e8rement, d\u00e9glacer quelques secondes avec l&rsquo;armagnac, puis r\u00e9server.<\/p>\n<blockquote><p>saisir l\u00e9g\u00e8rement, sinon, ca brule&#8230; voil\u00e0.<\/p><\/blockquote>\n<p>la sauce est simple, on \u00e9mince la poutargue tr\u00e8s finement et on jette ca avec le safran et l&rsquo;amaretto dans la cr\u00e8me fraiche, sauf qu&rsquo;on la rallonge un peu pour la rendre un peu plus liquide.<\/p>\n<blockquote><p>bien agiter pour bien r\u00e9partir les morceaux de poutargue, ils ont tendance \u00e0 se coller<\/p><\/blockquote>\n<p>abaisser la pate en deux feuillets \u00e0 \u00e9paisseur &lsquo;2&rsquo; pour former les ravioli deux options, soit vous \u00eates un pro, et ils auront une bonne t\u00eate, soit vau faites comme moi, une forme lamentable en remplissant trop.
