boudin. l\u00e9g\u00e8rement relev\u00e9 \u00e0 l&rsquo;Antillaise, on peut en faire plein de trucs,<\/p>\n<p>les plus timor\u00e9s le feront aux pommes, l\u00e0 c&rsquo;est feuillet\u00e9 et aux poires caram\u00e9lis\u00e9es \ud83d\ude42<\/p>\n<p>pour 3 feuillet\u00e9s :<\/p>\n<ul>\n<li>360g de boudin antillais<\/li>\n<li>1 poire et demi<\/li>\n<li>5cl de mad\u00e8re<\/li>\n<li>240g de p\u00e2te feuillet\u00e9<\/li>\n<li>un peu de beurre pour la cuisson des poires<\/li>\n<li>1 oeuf pour dorer<\/li>\n<\/ul>\n<p>la pr\u00e9paration est encore une fois tr\u00e8s simple.<\/p>\n<p>Peler et couper les poires en petits d\u00e9s de 7 \u00e0 10 mm de c\u00f4t\u00e9.<\/p>\n<p>dorer au beurre \u00e0 feu fort pour caram\u00e9liser en agitant r\u00e9guli\u00e8rement pour \u00e9viter de noircir environ 5 minutes.<\/p>\n<p>r\u00e9server les poires<\/p>\n<p>presser ou racler la p\u00e2te de boudin,<\/p>\n<p>Cuire la p\u00e2te de boudin \u00e0 la po\u00eale en remuant bien environ 10 minutes \u00e0 feu moyen, il doit brunir, mais pas noircir, si vous obtenez des boulettes noires, c&rsquo;est trop cuit.<\/p>\n<p>en toute fin de cuisson, m\u00e9nager dans le po\u00eale trois tas , et d\u00e9glacer avec les 5cl de mad\u00e8re, laisser absorber le liquide, puis sortir du feu<\/p>\n<p>Abaisser votre p\u00e2te feuillet\u00e9e en 3 rectangles de 15&#215;30<\/p>\n<p>garnir la moiti\u00e9 du rectangle avec le boudin,\u00a0 ajouter les poires, refermer vos feuillet\u00e9s en appliquant un peu d&rsquo;eau sur la jointure.<\/p>\n<p>strier d\u00e9licatement vos feuillet\u00e9s sans blesser la p\u00e2te, sinon, ils ne gonfleront pas.<\/p>\n<p>enfourner 15 minutes \u00e0 210 \u00b0C<\/p>\n<p>servir chaud<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone
