garni au turbot, poireau et poivron"},"content":{"rendered":"<p>C&rsquo;est ma meilleure r\u00e9ussite depuis un bon moment. et en plus c&rsquo;est tout simple<\/p>\n<p>pour 2<\/p>\n<ul>\n<li>1 petit turbot (250 \u00e0 350 g de filets sans peau une fois les filets lev\u00e9s )<\/li>\n<li>1 demi poireau (plut\u00f4t du vert)<\/li>\n<li>1 demi poivron<\/li>\n<li>2 cuiller \u00e0 soupe bomb\u00e9es de cr\u00e8me fraiche<\/li>\n<li>400g de p\u00e2te \u00e0 pain<\/li>\n<\/ul>\n<p>c&rsquo;est simple, mais, ca demande un peu de soin quand m\u00eame.<\/p>\n<p>d\u00e9coupez le poireau en julienne et le poivron en brunoise<\/p>\n<p>po\u00ealez pendant 5 \u00e0 10 minutes le poireau pour l&rsquo;assouplir mais pas le r\u00e9duire en fondue.<\/p>\n<p>m\u00eame travail avec le poivron<\/p>\n<p>si votre poissonnier ne vous l&rsquo;a pas fait, lever les filets, puits po\u00ealez juste un aller retour 1 minute sur chaque face sur un po\u00eale chaude avec un peu d&rsquo;huile pour retirer la peau. et \u00e9viter que le turbot ne rende trop d&rsquo;eau durant la cuisson au four, puis d\u00e9couper en morceau de 15 \u00e0 18 mm de c\u00f4t\u00e9 et r\u00e9server<\/p>\n<p>\u00e9taler deux pattons en rectangles grossier, puis disposer les l\u00e9gumes en lit sur la moiti\u00e9 de la p\u00e2te, placer une cuiller de cr\u00e8me fraiche sur les l\u00e9gumes sans trop l&rsquo;\u00e9taler, ajouter le poisson et refermer le chausson, cuisson 12 minutes \u00e0 275 \u00b0C sur pierre ou plaque \u00e0 four tr\u00e8s chaud en position four a sole.<\/p>\n<p><img loading=\"lazy\"
