Le Mousseron est un champignon un peu cors\u00e9 et l\u00e9g\u00e8rement amer, juste po\u00eal\u00e9, c&rsquo;est bien, mais comme le Samedi soir c&rsquo;est Pizza, et autres pr\u00e9parations au four, l\u00e0, ils sont pass\u00e9s sur une cro\u00fbte<\/p>\n<p>Pour 2 personnes :<\/p>\n<ul>\n<li>200g de p\u00e2te \u00e0 pain<\/li>\n<li>1 filet de Bar d&rsquo;environ 150g<\/li>\n<li>1 demi-douzaine de Mousserons<\/li>\n<li>1\/2 oignon<\/li>\n<li>10cl de cr\u00e8me fra\u00eeche<\/li>\n<li>1\/2 cuiller \u00e0 caf\u00e9 de poudre de cannelle<\/li>\n<li>1 poign\u00e9e de noix de cajou<\/li>\n<\/ul>\n<p>Je conseille de cuire le poisson et les champignons s\u00e9par\u00e9ment pour bien distinguer les go\u00fbts.<\/p>\n<p>D\u00e9couper en tranches, puis sauter les champignons dans un peu d&rsquo;huile d&rsquo;olive puis r\u00e9server.<\/p>\n<p>Po\u00ealer le filet de Bar de mani\u00e8re \u00e0 enlever la peau, dorer l\u00e9g\u00e8rement, mais, laisser cuire incompl\u00e8tement (pr\u00e9voir une minute de plus au four pour parfaire la cuisson) r\u00e9server.<\/p>\n<p>\u00e9taler la p\u00e2te \u00e0 pain tr\u00e8s finement, id\u00e9alement en dessus de 3mm.<\/p>\n<p>\u00e9taler la cr\u00e8me fra\u00eeche sur la p\u00e2te, disposer l&rsquo;oignon d\u00e9coup\u00e9 en rondelles.<\/p>\n<p>Enfourner 3 \u00e0 5 minutes \u00e0 four tr\u00e8s chaud (le mien monte \u00e0 275\u00b0C) sur pierre ou cuisson \u00e0 la sole si vous en disposez.<\/p>\n<p>Ajouter en fin de cuisson les champignons et le Bar en l&rsquo;\u00e9miettant grossi\u00e8rement.
