Marions-les !<\/p>\n<p>Pour deux entr\u00e9es :<\/p>\n<ul>\n<li>200g de noix de p\u00e9toncles<\/li>\n<li>4 asperges vertes<\/li>\n<li>80g de petits pois frais \u00e9coss\u00e9s<\/li>\n<li>le zeste d&rsquo;une orange<\/li>\n<li>30g de beurre<\/li>\n<li>30g de farine<\/li>\n<li>20cm d&rsquo;algue Kombu<\/li>\n<li>2 \u00e9toiles de badiane<\/li>\n<li>1 pinc\u00e9e de cannelle<\/li>\n<li>45 &#8211; 50 cl d&rsquo;eau ou de bouillon de l\u00e9gumes ou de poisson<\/li>\n<li>1 cuill\u00e8re a soupe de Cointreau<\/li>\n<\/ul>\n<p>Pr\u00e9cuire les asperges et les petits pois je recommande 12 minutes de cuisson pour les petits pois et 15 minutes pour les asperges, puis r\u00e9server s\u00e9par\u00e9ment.<\/p>\n<p>Pr\u00e9parer un roux a feu moyen avec le beurre, la farine et un peu d&rsquo;eau, d\u00e9tendre progressivement jusqu&rsquo;\u00e0 une texture liquide, puis baisser le feu \u00e0 doux<\/p>\n<p>Ajouter les noix de p\u00e9toncle, l&rsquo;algue Kombu, la badiane, le zeste.<\/p>\n<p>Laisser cuire en dessous du point d&rsquo;\u00e9bullition pendant 30 minutes en remuant doucement.<\/p>\n<p>Enlever l&rsquo;algue Kombu, d\u00e9couper les asperges en tron\u00e7ons de 1,5cm et les ajouter avec les petits-pois.<\/p>\n<p>Ajuster la texture avec un peu d&rsquo;eau si besoin et ajouter le Cointreau et la cannelle.
