{"id":415,"date":"2018-12-31T00:38:00","date_gmt":"2018-12-30T23:38:00","guid":{"rendered":"https:\/\/lacuisinedenounours.fr\/?p=415"},"modified":"2018-12-31T00:38:00","modified_gmt":"2018-12-30T23:38:00","slug":"feuillete-scallop-celery-and-truffle","status":"publish","type":"post","link":"https:\/\/lacuisinedenounours.fr\/?p=415&lang=en","title":{"rendered":"Feuillet\u00e9 scallop celery and truffle"},"content":{"rendered":"<p>I love it when someone brings me an unexpected product, a few fallen apples made an excellent juice, some Mote went well with a Chili, anything or nothing, a great source of challenge and inspiration and a little agreement that the bringer will get a share of the results.<\/p>\n<p>To end 2018 well, scallop and black truffle.<\/p>\n<p>For 6 feuillet\u00e9s<\/p>\n<p>puff pastry<\/p>\n<ul>\n<li>250g all purpose flour<\/li>\n<li>125 cl water<\/li>\n<li>1 pinch of salt<\/li>\n<li>160g butter<\/li>\n<\/ul>\n<blockquote><p>yeah, I mean it, butter, don&rsquo;t go and put some trans fat stuffed margarine in here, bleaaaah<\/p><\/blockquote>\n<p>or<\/p>\n<ul>\n<li>6 pieces de 12 cm x 20 cm x 3mm puff pastry<\/li>\n<\/ul>\n<p>for stuffing<\/p>\n<ul>\n<li>6 scallops with coral (around 200g)<\/li>\n<li>200g skinned celery.<\/li>\n<li>9g\u00a0 truffle<\/li>\n<li>1 pinch of salt<\/li>\n<\/ul>\n<ul>\n<li>1 egg for coating<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>We will, of course, begin with the puff pastry, I&rsquo;m not going to get all lectury on you and explain how to make that, it&rsquo;s tough enough for me not to make any comments<\/p>\n<p>Fair enough, make one, google it, buy it, if you can make one with 6 turns, be my guest, mine has 3 turns that&rsquo;s 27 layers, it&rsquo;s plenty enough, it even keeps the top layer from burning when cooking. yup the thinnest top layers tend to burn when cooking&#8230;
