{"id":295,"date":"2018-08-15T09:52:24","date_gmt":"2018-08-15T07:52:24","guid":{"rendered":"https:\/\/lacuisinedenounours.fr\/?p=295"},"modified":"2018-08-15T10:26:12","modified_gmt":"2018-08-15T08:26:12","slug":"295","status":"publish","type":"post","link":"https:\/\/lacuisinedenounours.fr\/?p=295&lang=en","title":{"rendered":"Shrimp and avocado mousse kn\u00e4ckerbr\u00f6d appetizers"},"content":{"rendered":"\r\n<p class=\"wp-block-paragraph\">Since my vacation in Sweden, and more accurately, since my stop at <span style=\"color: #008000;\"><a style=\"color: #008000;\" href=\"https:\/\/skolgarden.wordpress.com\/about-us\/\">Amy and Tomas&rsquo; excellent guest house<\/a><\/span>, I tried making some kn\u00e4ckerbr\u00f6d, which is just a fancy way of saying crispbread, it does taste more swedish though \ud83d\ude42 . my first attempts returned something closer to Terry Pratchett&rsquo;s mythic dwarf bread than anything edible by a human being, but I think I got the basics now, so, here&rsquo;s a little appetizer with shrimp and avocado that will change from the ever present avocado and shrimp salad.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">for roughly 15 pieces (will serve 4)<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">for the kn\u00e4ckerbr\u00f6d cups<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>50g rye flour<\/li>\r\n<li>25 ml water<\/li>\r\n<li>a little salt<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">for the avocado mousse<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1 ripe avocado<\/li>\r\n<li>10 cl thick cream<\/li>\r\n<li>10cl water<\/li>\r\n<li>a pinch of salt and finely ground pepper<\/li>\r\n<li>1\/4 lemon juice<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">for topping<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>one pre-cooked shrimp per appetizer (15 is fine)<\/li>\r\n<li>half a lemon<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">the mousse is meant to be siphoned, not hand whipped, so I recommend you start with that, to leave it enough time in the fridge.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">prep the avocado flesh and blend it along with the other mousse ingredients until perfectly smooth<\/p>\r\n\r\n\r\n\r\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\r\n<p>I mean it : perfectly smooth, there&rsquo;s nothing worse than a siphon trying to pass lumps. (for those of you who wonder : yes that happened to me)<\/p>\r\n<\/blockquote>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">pour into a 1\/2 litre siphon, inject one NO2 cartridge and store in the fridge for at least half an hour.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">knead the rye flour with the water until soft and even, then, flatten as thinly as possible, then cut in squares that will fit the cavities of you silicon mould ( don&rsquo;t pick anything bigger than 2cm, you want to keep it &lsquo;bite sized&rsquo;) also, don&rsquo;t bother trimming the dough from the outside of the cavities unless you want something streamlined.
