That makes the flattening and cutting process extremely tedious,<\/p>\n<p>Still, I managed to miraculously pull out a few noodles<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-241\" src=\"https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2018\/06\/20180617_115244-e1529326720371-768x1024.jpg\" alt=\"salad bowl with soba noodles soba knife on the side\" width=\"640\" height=\"853\" srcset=\"https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2018\/06\/20180617_115244-e1529326720371-768x1024.jpg 768w, https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2018\/06\/20180617_115244-e1529326720371-225x300.jpg 225w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>For two servings<\/p>\n<ul>\n<li>250g soba noodles<\/li>\n<li>1 green onion<\/li>\n<li>1\/2 mozzarella di buffala (100g tofu if you want to make it a vegan dish)<\/li>\n<li>1 handful of almonds<\/li>\n<li>10 green asparagus<\/li>\n<li>1\/8 stale baguette (for croutons, use shop bought if you feel lazy)<\/li>\n<li>a little vegetable oil for frying<\/li>\n<li>15cl of your favorite salad dressing<\/li>\n<\/ul>\n<p>Blanch your asparagus and cut them in chunks<\/p>\n<p>Mince the onion<\/p>\n<p>Pestle your almonds to obtain small chunks<\/p>\n<p>Loosely cut or tear pieces off your mozarella<\/p>\n<p>Cut your bread and fry your croutons at the last minute to have them warm when you&rsquo;ll serve your salad<\/p>\n<p>Place 125g\u00a0 noodles at the bottom of a flat bowl and add half of each of teh ingredients you prepared previously in no particular order<\/p>\n<p>My favorite sauce is an &lsquo;Italian&rsquo; dressing with just balsamic vinegar and olive oil and just a dash of salt and pepper<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-242\" src=\"https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2018\/06\/20180617_124753-e1529326281474-768x1024.jpg\" alt=\"salad bowl with noodles asparagus almonds\" width=\"640\" height=\"853\" srcset=\"https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2018\/06\/20180617_124753-e1529326281474-768x1024.jpg 768w, https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2018\/06\/20180617_124753-e1529326281474-225x300.jpg 225w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Soba is a religion and I am an heretic I plead guilty, I knead my dough as delicately as a battering ram, calculate my water proportion haphazardly.
