But this time, we\u2019re doing things a little differently.<\/p>\n<h3>For two servings:<\/h3>\n<ul>\n<li>1 fennel bulb<\/li>\n<li>120g cod loin<\/li>\n<li>4 scallops with coral<\/li>\n<li>2 sea urchins or 20g of sea urchin roe<\/li>\n<li>3 tablespoons cr\u00e8me fra\u00eeche<\/li>\n<li>1\/4 teaspoon whole grain mustard<\/li>\n<li>1\/4 teaspoon mustard<\/li>\n<li>A pinch of saffron threads (~12)<\/li>\n<li>1 teaspoon coriander seeds<\/li>\n<li>1 teaspoon caraway seeds<\/li>\n<li>1 tablespoon olive oil<\/li>\n<\/ul>\n<p><strong>Optional:<\/strong><\/p>\n<ul>\n<li>1 teaspoon Cointreau<\/li>\n<li>2 teaspoons Armagnac<\/li>\n<\/ul>\n<hr \/>\n<p>The trickiest part of this recipe is timing all the cooking elements so they come together perfectly\u2026 but let\u2019s not get ahead of ourselves. Let\u2019s start from the beginning.<\/p>\n<p>Slice your fennel bulb horizontally to create six cup-like pieces (for once, we\u2019re being selective\u2014choose the most beautiful cups and save the rest for a soup).<\/p>\n<blockquote><p>Usually, the uneven size of fennel\u2019s concentric layers can be annoying when plating, but in this case, we\u2019ll use it to our advantage.<\/p><\/blockquote>\n<p>Select two sets of three cups, each of a different size.<\/p>\n<p>If your sea urchins are whole, extract the roe and place it on a paper towel to drain.<\/p>\n<p>Blanch the fennel cups in boiling water for 2 minutes, then keep them warm.<\/p>\n<p>For cooking, we\u2019ll go with the version that includes alcohol. count 1 minute less for sauces that don&rsquo;t receive the alcohols.<\/p>\n<p>In a small saucepan over medium heat, add 2 tablespoons of cr\u00e8me fra\u00eeche, the Armagnac, and the mustard. Stir to combine, then add the scallops and slightly lower the heat.<\/p>\n<p>Let them cook while stirring occasionally; the entire process takes about 7 minutes.<\/p>\n<p>In another saucepan, add 1 tablespoon of cr\u00e8me fra\u00eeche, the Cointreau, and the saffron. Stir to blend.<\/p>\n<p>Add the cod and cook over medium heat.
