{"id":1216,"date":"2024-12-29T19:01:09","date_gmt":"2024-12-29T18:01:09","guid":{"rendered":"https:\/\/lacuisinedenounours.fr\/?p=1216"},"modified":"2024-12-29T19:10:53","modified_gmt":"2024-12-29T18:10:53","slug":"minimalistic-kaisershmarren","status":"publish","type":"post","link":"https:\/\/lacuisinedenounours.fr\/?p=1216&lang=en","title":{"rendered":"Minimalist Kaiserschmarren"},"content":{"rendered":"<p>Austrian cuisine doesn\u2019t get nearly the attention it deserves.<\/p>\n<p>Meanwhile, On the other side of the Alps, we\u2019ve borrowed from its classics to bring you this simple, efficient version.<\/p>\n<p>Traditionally, Kaiserschmarren includes raisins and a splash of rum or kirsch, but this version is family-friendly and perfect for all ages.<\/p>\n<blockquote><p>I usually don&rsquo;t, but, I\u2019m going to insist on some specific equipment this time:<\/p>\n<p>You\u2019ll need TWO frying pans, each at least 30 cm in diameter and 5 cm deep. Set up two burners\u2014one for each pan. Trust me, this will make your life much easier.<\/p><\/blockquote>\n<p>For 4 skiers:<\/p>\n<ul>\n<li>6 eggs<\/li>\n<li>200g all-purpose flour<\/li>\n<li>350ml whole milk<\/li>\n<li>An indulgent amount of butter (okay, let\u2019s say 120g)<\/li>\n<li>An indulgent amount of cane sugar (fine, 80g works)<\/li>\n<li>400g applesauce<\/li>\n<\/ul>\n<p>Optional:<\/p>\n<ul>\n<li>1 tsp vanilla extract<\/li>\n<li>1 Alpine sunset<\/li>\n<\/ul>\n<p>Think of this as making one big, fluffy pancake.<\/p>\n<p>Separate the egg whites and yolks.<\/p>\n<p>Whisk together the flour, milk, egg yolks, and vanilla extract (if you\u2019re using it) until smooth.<\/p>\n<p>Beat the egg whites to stiff peaks, then gently fold them into the batter<\/p>\n<p>&nbsp;<\/p>\n<p>Butter one frying pan and preheat it over medium heat.<\/p>\n<p>Pour the batter into the hot pan and cover it with the second pan as a lid.<\/p>\n<blockquote><p>Folding the batter gently adds plenty of air, which makes it light but also a bit uneven when cooking. Covering it helps the top firm up, so flipping will be much easier.<\/p><\/blockquote>\n<p>Let it cook for about 5 minutes.<\/p>\n<p>In the meantime, preheat the second pan with a touch of butter.<\/p>\n<p>Flip the pancake into the second pan and cook for another 2 minutes.<\/p>\n<p>Once set, cut the pancake in half, then into small pieces about 2.5\u20133 cm across. Divide the pieces evenly between the two pans.<\/p>\n<p>Turn the heat to high, adding half the butter and sugar to each pan. Toss the pieces to coat them in the buttery, sugary mixture, letting them caramelize lightly.<\/p>\n<p>This step takes just a minute or so.
