{"id":1168,"date":"2023-08-17T00:50:06","date_gmt":"2023-08-16T22:50:06","guid":{"rendered":"https:\/\/lacuisinedenounours.fr\/?p=1168"},"modified":"2024-12-05T20:41:17","modified_gmt":"2024-12-05T19:41:17","slug":"assorted-mushroom-and-tenderloin-waffles-de-fontaine","status":"publish","type":"post","link":"https:\/\/lacuisinedenounours.fr\/?p=1168&lang=en","title":{"rendered":"Assorted mushroom and tenderloin waffles &#8211; Fontaine style &#8211;"},"content":{"rendered":"<p>this, as you obviously guessed if you know what &lsquo;Fontaine&rsquo; is,\u00a0 is a celebration of the release of Genshin Impact V4.0! haters gonna hate, gamers gonna play \ud83d\ude42<\/p>\n<p>For 4 gamers:<\/p>\n<h3>For the waffles:<\/h3>\n<ul>\n<li>125g Type 65 flour<\/li>\n<li>15g refreshed sourdough starter<\/li>\n<li>50g butter<\/li>\n<li>1 egg<\/li>\n<li>15cl milk (approximately)<\/li>\n<\/ul>\n<h3>For the topping:<\/h3>\n<ul>\n<li>120g pork tenderloin<\/li>\n<li>100g porcini mushrooms<\/li>\n<li>100g chanterelles<\/li>\n<li>100g hedgehog mushrooms<\/li>\n<\/ul>\n<h3>For the sauces:<\/h3>\n<ul>\n<li>20cl pale ale<\/li>\n<li>20cl red wine<\/li>\n<li>8cl Armagnac or your favorite brandy<\/li>\n<li>3 shallots<\/li>\n<li>1 apple<\/li>\n<li>15cl thick cr\u00e8me fra\u00eeche<\/li>\n<\/ul>\n<hr \/>\n<p><strong>Waffles<\/strong><br \/>\nSoften the butter in a mixing bowl, then add the flour. Crumble the butter into the flour, then mix in the egg and sourdough starter. Gradually loosen the mixture with the milk until you have a smooth batter.<\/p>\n<p>The rising time depends on your sourdough starter; I suggest letting it rise for 6 hours at room temperature. Then transfer to the fridge to halt fermentation until it\u2019s time to cook the waffles.<\/p>\n<p>Aim for 6 whole waffles, which will be cut in half for plating.<\/p>\n<hr \/>\n<p><strong>Meat Preparation<\/strong><br \/>\nSear the tenderloin on all sides, then reduce the heat to its lowest setting. Cook covered for 1 hour or until the meat is perfectly tender and cooked through.<\/p>\n<p>Slice into 12 thin pieces.<\/p>\n<hr \/>\n<p><strong>Sauces<\/strong><\/p>\n<p>We\u2019ll prepare three condiments to pair with the different mushrooms:<\/p>\n<ul>\n<li>Shallot compote with beer<\/li>\n<li>Apple compote with red wine<\/li>\n<li>Armagnac cream<\/li>\n<\/ul>\n<ol>\n<li>Finely chop the shallots and saut\u00e9 them in a little oil. Deglaze with beer and let them simmer until compote-like.<\/li>\n<li>Peel the apple and dice into small cubes. Saut\u00e9 in a little oil, deglaze with red wine, and let simmer until reduced.<\/li>\n<li>Mix the Armagnac with cr\u00e8me fra\u00eeche, reduce gently, and ensure it doesn\u2019t separate. Adjust the texture with a bit of cornstarch if necessary.<\/li>\n<\/ol>\n<hr \/>\n<p><strong>Mushrooms<\/strong><br \/>\nDice each type of mushroom into small cubes and saut\u00e9 them separately. Keep warm until plating.<\/p>\n<hr \/>\n<p><strong>Plating<\/strong><br \/>\nPlace <strong>3 half-waffles<\/strong> per plate. Top each half-waffle with a slice of tenderloin.
