Otherwise, let\u2019s be honest\u2014the fava beans are meh.<\/p>\n<p>For 4 people:<\/p>\n<hr \/>\n<h3><strong>For the Galette Batter:<\/strong><\/h3>\n<ul>\n<li>150g buckwheat flour<\/li>\n<li>50g high gluten flour or \u201c00\u201d flour(Anything with a W index above 270 will work\u2014the idea is to make it sturdy.)<\/li>\n<li>30cm strip of kombu seaweed<\/li>\n<li>1\/2 liter water<\/li>\n<\/ul>\n<hr \/>\n<h3><strong>For the Filling:<\/strong><\/h3>\n<ul>\n<li>2 turbot fillets<\/li>\n<li>100g pre-cooked and peeled fava beans<br \/>\n(or 400g whole fava beans\u2014but really, they don\u2019t add much here.)<\/li>\n<li>300g pink onions<\/li>\n<li>2 tablespoons Chardonnay vinegar<\/li>\n<li>2 tablespoons soy sauce<\/li>\n<li>12 sprigs of chives<\/li>\n<\/ul>\n<hr \/>\n<h3><strong>Instructions<\/strong><\/h3>\n<h4><strong>Make the Galette Batter (No Eggs\u2014Yes, No Eggs!)<\/strong><\/h4>\n<p>The trick is using the slight gelling boost from the kombu seaweed.<\/p>\n<ol>\n<li>Rehydrate the seaweed over low heat, covered, for about 40 minutes.<\/li>\n<li>Strain the broth and gradually add it to the flours, mixing until smooth. Let the batter rest while preparing the filling.<\/li>\n<\/ol>\n<hr \/>\n<h4><strong>Prepare the Onions:<\/strong><\/h4>\n<ol>\n<li>Slice the onions into strips.<\/li>\n<li>Saut\u00e9 over medium heat for 5 minutes until golden.<\/li>\n<li>Deglaze with the vinegar, cook another 5 minutes, then deglaze with soy sauce.<\/li>\n<li>Cook for another 5 minutes and keep covered until ready to plate.<\/li>\n<\/ol>\n<hr \/>\n<h4><strong>Cook the Turbot:<\/strong><\/h4>\n<ol>\n<li>Cut each turbot fillet into two pieces.<\/li>\n<li>Sear in a bit of olive oil over medium heat.<\/li>\n<\/ol>\n<hr \/>\n<h4><strong>Timing Tip:<\/strong><\/h4>\n<p>Start cooking the turbot 1\u20132 minutes before making the galettes so both are ready to serve at the same time.<\/p>\n<hr \/>\n<h3><strong>Recommended Plating:<\/strong><\/h3>\n<ol>\n<li>Fold the galette: first fold 1\/4 of the vertical edge, then 1\/4 of the horizontal edge.<\/li>\n<li>Place the fish inside, followed by the other garnishes.<\/li>\n<li>Finish with chopped chives sprinkled on top<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-847\" src=\"https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2023\/04\/20230410_123220-1024x768.jpg\" alt=\"crepe garnie avec du poisson blanc de l'oignon et des feves\" width=\"640\" height=\"480\" srcset=\"https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2023\/04\/20230410_123220-1024x768.jpg 1024w, https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2023\/04\/20230410_123220-300x225.jpg 300w, https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2023\/04\/20230410_123220-768x576.jpg 768w, https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2023\/04\/20230410_123220-1536x1152.jpg 1536w, https:\/\/lacuisinedenounours.fr\/wp-content\/uploads\/2023\/04\/20230410_123220-2048x1536.jpg 2048w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I\u2019m sharing this anyway because the vegan galette batter turned out quite well.
