It\u2019s a pseudo-cereal rich in complex proteins, rivaled only occasionally by quinoa.<\/p>\n<p><strong>This is a beta version<\/strong>, because like an absolute novice, I tried wok-cooking an entire pot of soba noodles. Mistakes were made, lessons were learned. Oh, and I forgot to add soy sauce to the stir-fry sauce&#8230;<\/p>\n<p>Otherwise, taste-wise, it\u2019s actually pretty decent.<\/p>\n<p><strong>Serves 4\u20135<\/strong><\/p>\n<hr \/>\n<h3><strong>Ingredients<\/strong><\/h3>\n<h4><strong>For the Noodles<\/strong><\/h4>\n<ul>\n<li><strong>Option 1<\/strong>:\n<ul>\n<li>300g buckwheat flour + 100g high-gluten flour<\/li>\n<\/ul>\n<\/li>\n<li><strong>Option 2<\/strong>:\n<ul>\n<li>400g store-bought dry noodles<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h4><strong>For the Vegetables and Seafood<\/strong><\/h4>\n<ul>\n<li>1\/4 celeriac<\/li>\n<li>4 parsnips<\/li>\n<li>8 scallops<\/li>\n<li>1 handful of langoustines<\/li>\n<li>1\/2 liter of mussels<\/li>\n<\/ul>\n<h4><strong>For the Stir-Fry Sauce<\/strong><\/h4>\n<ul>\n<li>15cl high-smoke-point oil (e.g., grapeseed)<\/li>\n<li>3cl sesame oil<\/li>\n<li>1 garlic clove<\/li>\n<li>1 shallot<\/li>\n<li>1 mild jalape\u00f1o pepper<\/li>\n<li>And, if you\u2019re not an absent minded idiot like me, some soy sauce<\/li>\n<\/ul>\n<hr \/>\n<h3><strong>Preparation<\/strong><\/h3>\n<h4><strong>1. Prepare the Vegetables<\/strong><\/h4>\n<ul>\n<li>Peel the celeriac and parsnips, then julienne them into thin strips.<\/li>\n<li>Blanch the julienned vegetables briefly in boiling water, then set them aside.<\/li>\n<\/ul>\n<h4><strong>2. Prepare the Seafood<\/strong><\/h4>\n<p>Because the sauce will bring most of the flavor, there\u2019s no need to go overboard on seasoning the seafood:<\/p>\n<ul>\n<li>Cook the mussels in lightly salted water for 10 minutes\u2014no aromatics needed.<\/li>\n<li>Cook the langoustines in the same way for no more than 3 minutes.<\/li>\n<li>If you bought the mussels, langoustines, and scallops whole, shell them all.<\/li>\n<li>Briefly blanch the scallops.<\/li>\n<\/ul>\n<hr \/>\n<h4><strong>3. Prepare the Stir-Fry Sauce<\/strong><\/h4>\n<ul>\n<li>Thinly slice the garlic, shallot, and jalape\u00f1o.<\/li>\n<li>Mix these aromatics with the grapeseed and sesame oils.<\/li>\n<\/ul>\n<hr \/>\n<h4><strong>4. Cook the Noodles<\/strong><\/h4>\n<ul>\n<li>If using fresh noodles: Make the dough by mixing the buckwheat and high-gluten flours, then roll and cut into thin noodles.<\/li>\n<li>If using dry soba noodles: Precook them briefly in boiling water to loosen them, then drain.<\/li>\n<\/ul>\n<hr \/>\n<h4><strong>5. Wok-Cooking<\/strong><\/h4>\n<p>This is where the magic happens, but it requires patience.<\/p>\n<ul>\n<li>Heat the wok to a high temperature.<\/li>\n<li>Stir-fry each portion of noodles individually for 1\u20133 minutes.
