A cozy Sunday evening tartlet to ease into the week ahead.<\/em><\/p>\n<h4>Makes: 6 tartlets<\/h4>\n<hr \/>\n<h4><strong>Ingredients:<\/strong><\/h4>\n<ul>\n<li><strong>200g flour<\/strong><\/li>\n<li><strong>100g butter<\/strong><\/li>\n<li><strong>150g fresh young porcini mushrooms<\/strong><\/li>\n<li><strong>150g butternut squash flesh<\/strong><\/li>\n<li><strong>120g fresh chestnuts<\/strong><\/li>\n<li><strong>1\/2 pink onion<\/strong><\/li>\n<li><strong>60g Livarot cheese (or any soft cheese &lsquo;with a personality&rsquo;)<br \/>\n<\/strong><\/li>\n<\/ul>\n<hr \/>\n<h4><strong>Instructions:<\/strong><\/h4>\n<p><strong>1. Prepare the shortcrust pastry:<\/strong><\/p>\n<ul>\n<li>Combine the <strong>flour<\/strong> and <strong>butter<\/strong> to form a dough. Let it rest in the fridge for at least <strong>1 hour<\/strong>.<\/li>\n<\/ul>\n<p><strong>2. Roast the chestnuts:<\/strong><\/p>\n<ul>\n<li>Score the <strong>chestnuts<\/strong> and roast them at <strong>140\u00b0C (284\u00b0F)<\/strong> for <strong>30 minutes<\/strong>.<\/li>\n<li>Peel the chestnuts while warm and set aside.<\/li>\n<\/ul>\n<p><strong>3. Bake the tartlet shells:<\/strong><\/p>\n<ul>\n<li>Roll out the pastry and line <strong>6 tartlet molds<\/strong>. Pre-bake the shells for <strong>30 minutes at 160\u00b0C (320\u00b0F)<\/strong>.<\/li>\n<\/ul>\n<p><strong>4. Prepare the filling:<\/strong><\/p>\n<ul>\n<li>Dice the <strong>butternut squash<\/strong>, <strong>mushrooms<\/strong>, and <strong>onion<\/strong> into brunoise-sized pieces (small cubes).<br \/>\n<blockquote><p>cut the mushrooms slightly larger, they will shrink during the cooking phase, even sizes will look nicer in the end product<\/p><\/blockquote>\n<\/li>\n<li>Cook the vegetables separately:\n<ul>\n<li>Saut\u00e9 the ceps until reduced.<\/li>\n<li>Cook the butternut squash until al dente.<\/li>\n<li>Lightly caramelize the onion, keeping it slightly crunchy.<\/li>\n<\/ul>\n<\/li>\n<li>Dice the <strong>Livarot cheese<\/strong> into small cubes (mac\u00e9doine size).<\/li>\n<li>Roughly chop the roasted chestnuts.<\/li>\n<\/ul>\n<hr \/>\n<p><strong>5. Assemble the tartlets:<\/strong><\/p>\n<ul>\n<li>Mix the <strong>vegetables, ceps, and chestnuts<\/strong> together to form the filling.<\/li>\n<li>Distribute the mixture evenly into the tartlet shells.<\/li>\n<li>Sprinkle the <strong>Livarot cubes<\/strong> over the top.<\/li>\n<\/ul>\n<hr \/>\n<p><strong>6.
