So here it is.<\/em><\/p>\n<h4>Serves: 2 as a main course (makes about 10 large ravioli)<\/h4>\n<hr \/>\n<p>For the pasta:<\/p>\n<ul>\n<li>100g fine semolina flour<\/li>\n<li>1 egg<\/li>\n<\/ul>\n<p>For the filling:<\/p>\n<ul>\n<li>200g scallop pieces<\/li>\n<li>2 Antohi peppers<\/li>\n<li>30ml Armagnac<\/li>\n<li>10g butter<\/li>\n<\/ul>\n<p>For the sauce:<\/p>\n<ul>\n<li>100ml cr\u00e8me fra\u00eeche<\/li>\n<li>0.5g saffron threads<\/li>\n<li>20g bottarga<\/li>\n<li>60ml amaretto<\/li>\n<\/ul>\n<p>To garnish:<\/p>\n<ul>\n<li>Small cherry tomatoes<\/li>\n<\/ul>\n<hr \/>\n<h4><strong>Instructions:<\/strong><\/h4>\n<p><strong>1. Prepare the pasta dough:<\/strong><\/p>\n<ul>\n<li>Combine the <strong>semolina flour<\/strong> and <strong>egg<\/strong> using a dough hook until smooth. Wrap the dough tightly in cling film and refrigerate for at least <strong>1 hour<\/strong>.<\/li>\n<\/ul>\n<hr \/>\n<p><strong>2. Make the filling:<\/strong><\/p>\n<ul>\n<li><strong>Deseed and finely dice the Antohi peppers<\/strong> into 2\u20133mm pieces.<\/li>\n<li><strong>Chop the scallops<\/strong> into small pieces (about 4mm).<\/li>\n<li>Heat the <strong>butter<\/strong> in a pan until lightly caramelized.<\/li>\n<li>Saut\u00e9 the peppers briefly, then add the scallops and cook lightly.<\/li>\n<li>Deglaze the pan with <strong>Armagnac<\/strong> for a few seconds. Remove from heat and set aside.<\/li>\n<\/ul>\n<p><strong>3. Prepare the sauce:<\/strong><\/p>\n<ul>\n<li>Finely mince the <strong>bottarga<\/strong> and mix it into the <strong>cr\u00e8me fra\u00eeche<\/strong> along with the <strong>saffron threads<\/strong> and <strong>amaretto<\/strong>.<\/li>\n<li>Adjust the consistency by adding a little water to make it slightly more fluid. Stir well to distribute the bottarga evenly\u2014it has a tendency to clump.<\/li>\n<\/ul>\n<p><strong>4. Assemble the ravioli:<\/strong><\/p>\n<ul>\n<li>Roll the pasta into two thin sheets (<strong>thickness setting 2 or 3<\/strong> if using a pasta machine).<\/li>\n<li>Place spoonfuls of the filling on one sheet, cover with the other, and seal to form ravioli.<\/li>\n<\/ul>\n<blockquote><p><strong>Pro tip:<\/strong> If you&rsquo;re skilled, they\u2019ll look great. If not, embrace a \u201crustic\u201d aesthetic with overfilled ravioli.<\/p><\/blockquote>\n<p><strong>5. Cook and serve:<\/strong><\/p>\n<ul>\n<li>Boil the ravioli gently in salted water until tender.<\/li>\n<li>Plate the ravioli with the sauce.
