The beer provides just enough lightness.<\/p>\n<ol>\n<li>Beat the eggs and melt the butter until softened or just barely liquid.<\/li>\n<li>Using a mixer, combine the flour and beaten eggs. Gradually add the butter, then slowly mix in about three-quarters of the beer. Stir gently.<\/li>\n<li>Grate the Beaufort into medium shreds and fold it into the batter.<\/li>\n<\/ol>\n<hr \/>\n<h3><strong>Step 2: Prepare the vegetables<\/strong><\/h3>\n<ol>\n<li>Blanch the cabbage leaves briefly in boiling water, then finely chop (removing the tough central stem beforehand).<\/li>\n<li>Finely dice the onion.<\/li>\n<li>Brown the cabbage and onion separately in a little oil over medium heat (<em>they cook at different rates<\/em>).<\/li>\n<li>Once caramelized, fold the vegetables into the waffle batter.<\/li>\n<\/ol>\n<hr \/>\n<h3><strong>Step 3: Cook the waffles<\/strong><\/h3>\n<ol>\n<li>Preheat your waffle iron. Cook each waffle for 4\u20138 minutes, depending on your appliance, until lightly golden.<\/li>\n<\/ol>\n<blockquote><p>To serve everything at once, you can pre-cook the waffles and finish them in the oven.<\/p><\/blockquote>\n<hr \/>\n<h3><strong>Step 4: Make the pumpkin dip<\/strong><\/h3>\n<ol>\n<li>Peel, deseed, and dice the pumpkin into chunks. Boil for about 20 minutes until tender.<\/li>\n<li>Drain most of the cooking water, leaving 5\u201310 ml to help adjust the texture.<\/li>\n<li>Blend the pumpkin with an immersion blender or mash it to create a smooth pur\u00e9e.<\/li>\n<li>Stir in the cr\u00e8me fra\u00eeche and mustard.
